Vanilla Chia Pot Parfait

I usually don’t make a blog post on Fridays but I could not wait until Sunday to share this recipe! Before embracing a plant-based lifestyle I loved having parfaits for breakfast, and I still can enjoy them equally as much as I did before! This recipe is layered into three sections coconut yogurt, chia pudding, and berries you cannot forget the granola on the top layer! This recipe would be perfect to make for your mom on Mother’s Day. Vanilla Chia Pot Parfait:

What You Will Need:

Chia Pudding:

  • 1 cup vanilla almond milk**
  • 1/4 cup chia seeds
  • 1 Tbsp maple syrup

**You can add 1/2 tsp of vanilla if you only have plain almond milk!


  1. In a cereal bowl combine mix together all the ingredients and place the bowl in the refrigerator to set for two hours.
  2. Two hours later, mix the chia pudding together with a spoon to ensure that the chia seeds absorb a lot of the liquid. Set in the refrigerator overnight.

Making the Vanilla Chia Pot Parfait:

What You Will Need:

  • 1 cup of coconut yogurt** (I use Silk but if you live in the UK I’ve heard Coyo is good!)
  • 1 cup raspberries
  • 1 batch of chia pudding (seen above)
  • 1 handful granola (see my recipe here)

**You can use any kind of yogurt here dairy or non-dairy…. whatever you’re into!


  1. In a regular sized mason jar add 3 tablespoons of the chia pudding to the bottom.
  2. Next, add 3 tablespoons of the yogurt over the chia pudding.
  3. For your third layer add enough raspberries to cover the yogurt.
  4. Repeat this process until you use up almost all of the ingredients, and you are left with yogurt on top.
  5. Top the parfait with granola, any left over berries, and coconut flakes! Enjoy!
